Of Coconut, Chillies..

A Vegan Dinner.
Sri Lankan Pol rotti, paruppu and spinach, lunu miris.
Coconut bread with wholemeal flour and Grated coconut.
Coconut creamy lentils with spinach. Chilli sambal with onions, dried chillies, lemon juice (lunu miris).

Left dough to rest while I prepped the side dishes.
Then, rolled into balls, pressed down using fingers, palm to flatten bread, centre and tips, until I got a round relatively thin bread.
Cooked on pan on both sides.
A simple quick dinner.
