A light healthy dinner.
Mediterranean cuisine.
Maybe with just a little bit of Indian.
Vegetables marinated with chilli powder, turmeric powder, salt. Drizzled on with olive oil. Roasted to crisp deliciousness.
Couscos, roasted veges, tossed with a dressing of olive oil, garlic, black pepper, chilli flakes, lemon juice.
Garnished with fresh lettuce and cherry tomatoes.
There you have it – couscous with roasted vegetables.
